Holland America Line and Chef Masaharu Morimoto renew the menu of ‘Morimoto by Sea’

Holland America Line has announced the renewal of the menu at Morimoto by Sea, the culinary offering signed by Chef Masaharu Morimoto, the company’s global ambassador for fresh seafood. The new menu will debut on all 11 ships in the fleet by mid-November, ahead of the special Alaska cruise aboard Nieuw Amsterdam departing on May 8, 2027, where the chef will be present for cooking demonstrations and dedicated events. The concept will continue to be offered both as a permanent restaurant on Nieuw Amsterdam and in a pop-up format on other units, introducing the Shokupan Bread Service at the start of the meal, the typical Japanese milk bread reinterpreted with a signature touch.

The culinary offering is enriched with new appetizers and main courses alongside the brand’s great classics, maintaining the excellence of fresh seafood and Japanese inspiration at its core. Among the new additions are Popcorn Shrimp with gochujang sauce, Lobster Miso Soup, Tan Tan Noodles in red curry broth, Miso Lamb Ribs, and Yuzu Butter Poached Lobster Tail. These new dishes will join iconic items such as Pork Gyoza and the renowned Morimoto Buri-Bop, along with a refreshed selection of sushi personally curated by the chef with the Morimoto Sushi Mori.
